Download statusbar - Puts little download progress meters in a bar at the bottom.
Faviconize tabs - Lets you double-click your tabs to make them just the favicon (that little icon on the left.) Useful when you use this;
Permatabs* - Lets you create tabs that never close, useful for sites you visit often. Using the faviconize addon they're unobtrusive.
Gmail manager* - If you have a few gmail accounts (like I do), then this lets you keep tabs on them and go between them quickly and easily.
* Doesn't work in Firefox 3 yet.
Then there's the middle click scroll (which you might not know about but I find very useful.) Click in the middle mouse button and you can scroll slowly or quickly down the page without having to keep moving the scroll wheel, which is very useful when reading long articles or wanting to get from the top to the bottom or visa versa quickly.

Safari would be more at home on my Laptop when I take it back to Uni. But I have downloaded it for here too and I am really really impressed with what I have seen from it so far. I have kept Firefox around to try out a few addons as well.
